Skirt is the diaphragm muscle: thin, open-grained, and unusually good at soaking up whatever you put on it. Cook it screaming hot for two to three minutes a side, rest, then slice thin against the grain. Get the grain direction wrong and it eats like rope. Get it right and it is the best fajita meat there is.
